This homemade dill pickle recipe is super simple and results in crisp pickles that beat anything you can find at the grocery store.

Homemade Dill Pickles

Like all of the other pickles recipes on Inspired Taste, these are refrigerator pickles, meaning you can enjoy them in as little as a day. I love the simple dill pickle brine in this recipe. It’s super simple to make and gives the cucumbers a classic flavor.

These are great right out of the fridge as a snack or served alongside your next juicy burger, veggie burger, or sandwich! We also love them for dill pickle dip. For another easy cucumber pickle, try our sweeter bread and butter pickles.

Key Ingredients

  • Cucumbers: For the best pickles, choose Kirby cucumbers. They’re short, fat, and have bumpy skin, making them ideal for pickling because they hold up well in the brine and stay crisp. If you don’t have access to a garden, farmers market, or farm, use smaller, thin-skinned cucumbers like Persian cucumbers or English cucumbers as a substitute.
  • Fresh Dill: I use a generous amount of dill since we’re making dill pickles. I chop half of it to float in the brine and leave the rest as whole sprigs, which I push into the jar for a pretty look.
  • Garlic: I add whole cloves of fresh garlic to my pickle brine because I love the flavor. If you’re sensitive to garlic, use a little less, and if you love it, mince it or add a few more cloves.
  • Vinegar: Use distilled white vinegar with 5% acidity (most are, but double-check the label).
  • Pickling Spices: For classic pickles, I combine a teaspoon of sugar with peppercorns, pickling or sea salt, yellow mustard seeds, coriander seeds, and dill seeds. I also love a dried arbol chili pepper for a hint of spice (but this is optional). If you do not have any, use a pinch of red pepper flakes.

How to Make Pickles

Tip 1: These easy pickles only require two steps. Like all the other delicious pickle recipes on Inspired Taste, these are refrigerator pickles, which means they are quick to make, and you don’t need to wait very long before enjoying them. Here’s what to expect:

  1. Let sliced cucumbers sit with salt, whole black peppercorns, chopped fresh dill, garlic cloves, and an optional arbol chili pepper for 30 minutes.
  2. Add them to a jar and cover them with our simple dill pickle brine.

Tip 2: Hot brine vs. cold brine. Depending on the type of crunch and color you love in your cucumber pickles, you have two options for the brine:

  • (Option 1) Hot brine pickles: If you prefer pickles with a slightly softer crunch similar to classic store-bought varieties, hot brining is your answer. Pour the hot brine directly over your cucumbers. While this method softens the cucumbers slightly and results in a slightly duller green color, many people love the texture! Another big advantage of the hot brine is that you can start snacking on these pickles the next day!
  • (Option 2) Cold brine pickles: For pickles with a snappy crunch and a fresh green color, cold brining is the way to go. For this method, allow the brine to cool completely before pouring it over the cucumbers. Be patient, as the full pickling process takes a bit longer (typically 3 to 5 days). But trust us, the wait is worth it for that extra crunch and bright color. These remind me more of my favorite deli-style pickles!

Ways to Use Dill Pickles (Other than snacking!)

Perfect Dill Pickles

We created this recipe for dill pickles with our friend and chef, Richard Hattaway. He helped us dial in the recipe and has truly made our family’s go-to pickles! You have two options when making these pickles: hot-brined or cold-brined pickles. Hot-brined pickles are ready in a day, offering a quicker option, while cold-brined pickles take 3 to 5 days before they are ready. Cold-brined pickles are more crisp and retain a vibrant green color. For a more detailed comparison, please refer to the article above.

1-quart jar

You Will Need

6 pickling cucumbers, like Kirby (21 ounces or 600g)

5 cloves garlic

4 sprigs fresh dill

1 dried arbol chili pepper, optional

4 whole peppercorns

1 cup white vinegar, 5% acidity (236ml)

½ cup water (118ml)

2 teaspoons pickling salt for cucumbers (12g)

¼ teaspoon pickling salt for brine (2g)

1 teaspoon sugar

¼ teaspoon yellow mustard seeds

¼ teaspoon whole coriander seeds

¼ teaspoon dill seeds, optional

Directions

    1Prepare the cucumbers: Cut the ends off the cucumbers and cut them into spears lengthwise (I typically get 6 spears per cucumber).

    2Prepare the garlic: For garlicky pickles, mince the garlic. For a milder garlic flavor, leave the garlic cloves peeled and whole.

    3Prepare the dill: Chop half of the dill and keep the rest as whole dill sprigs.

    4Salt the cucumbers: In a large bowl, toss the cucumbers with 2 teaspoons (12g) of salt, peppercorns, garlic, chopped dill, and optional arbol chili pepper. Let them sit for 30 minutes.

    5Add to a jar: Pack the cucumbers tightly into a 1-quart mason jar (1 liter). If some cucumbers don’t fit, cut them in half and place them on top of the packed spears. Scrape all the dill, garlic, and salt from the bowl into the jar. Slide the chili and slide the remaining sprigs of fresh dill down the side of the jar.

    6Make pickle brine: In a small saucepan, bring vinegar, water, ¼ teaspoon (2g) salt, 1 teaspoon sugar, mustard seeds, coriander seeds, and dill seeds to a boil.

    7For hot-brined pickles: Immediately pour the hot brine over the cucumbers to fully submerge them. Leave about ⅛ inch of space between the top of the brine and the jar lid. Let the jar cool to room temperature, then tighten the lid finger-tight.

    8For cold-brined pickles: Allow the brine to cool to room temperature before pouring it over the cucumbers to fully submerge them. Leave about ⅛ inch of space between the top of the brine and the jar lid. Tighten the lid finger-tight.

    9Refrigerate: Place the jar upside down in a bowl for the first night, then turn it right-side-up the next day. Hot-brined pickles will be ready the next day, while cold-brined pickles need 3 to 5 days before they’re ready to enjoy. The jar of pickles will last in the fridge for up to one month.

Adam and Joanne’s Tips

  • Cucumbers: The best cucumbers for pickling are Kirby, Boston pickling, and other pickling-specific varieties. They are short, fat, and have bumpy skin, making them perfect for brining while retaining their crispness. Smaller Persian cucumbers are a good alternative.
  • Dill seeds: These are classic in pickling recipes. They are not the same as dried dill weed. I find them online or in natural/organic food stores.
  • Canning: These pickles have been specifically designed for the refrigerator and are meant to be kept in the fridge at all times. However, if you’re experienced in canning, you could adapt them for long-term shelf stability. This would involve using sanitized jars, new lids, and possibly a pressure canner.
  • Salt: Pickling salt is best, but you can also use Morton’s kosher salt or sea salt. Avoid table salt due to additives. If using Diamond Crystal salt, you may need to adjust the quantity as it’s larger than pickling salt. We recommend measuring by weight for pickles. If you measure by volume (like tablespoons), you will need about 50% more Diamond Crystal salt.
  • The nutrition facts provided below are estimates. Calculating how much salt is in the pickle spears is difficult, so we have included all of the brine in the calculations.

If you’ve tried our salmon patties (the ones with canned salmon), think of this salmon burger recipe as their fresh and fancy cousin. We’re using beautiful, high-quality salmon here, and the results are just so good.

We always pile these burgers high with a generous spoonful of creamy dill sauce (it’s perfect with salmon). The burgers are big, juicy in the middle, and most importantly, absolutely delicious. Key Ingredients

  • Salmon: Go for a high-quality, higher-fat salmon like king or Atlantic. Fresh is great, but thawed frozen salmon works well, too. If you’re working with canned or cooked salmon, hop over to our easy salmon patties recipe instead.
  • Dijon, Lemon, and Herbs: Dijon mustard, lemon zest, fresh dill, and parsley all go into the mix. These are classic ingredients for salmon, and they really make these burgers delicious.

How to Make Salmon Burgers with Fresh Salmon

Tip 1: Make a binder. This is my favorite trick for salmon burgers. It’s so clever, you’ll feel like a rockstar in the kitchen! Take a quarter of the salmon and blend it up with the egg, mustard, lemon zest, and spices (I use my food processor for this). You’ll end up with a paste that holds the rest of the salmon burger mix together, so your patties stay together when you cook them.

Tip 2: Hand-cut the salmon. We’re working with beautiful salmon, so let’s treat it right. Use a sharp knife to cut the rest of the salmon (the part not used for the binder) into small, 1/4-inch cubes. It’s quicker than you’d think, and it gives the burgers the best texture.

Tip 3: Chill the mixture. Fold the salmon paste and chopped salmon together until everything is well mixed, then sprinkle in the breadcrumbs and mix again. Place the mixture in the fridge for 15 minutes. Chilling helps the burgers hold their shape when you cook them.

Tip 4: Start in a skillet, finish in the oven. Once the mixture is chilled, shape it into four burger-sized patties. Brown them on both sides in a skillet with a little oil. You just want some color, not to cook them through. Then slide them in the oven to finish baking. They’ll be ready in about 8 minutes. Then you are ready to serve!

Serving Suggestions

In the photos, you’ll see we used soft, buttery brioche buns, tender lettuce, and a big spoonful of creamy dill sauce. They’re fantastic this way, but sometimes I skip the bun and serve the burgers over creamy coleslaw, broccoli slaw (the broccoli version is my personal favorite). They are also lovely next to this snap pea salad.

Salmon Burgers with Creamy Dill Sauce

We’re so happy to add this fresh salmon burger to our ever-growing list of salmon recipes. It’s genuinely one of my top ways to use salmon right now. Use a higher-fat variety of salmon, like king salmon or Atlantic (thawed frozen salmon is fine!).

You Will Need

1 pound skinless, boneless salmon fillets, preferably king or Atlantic (450 g)

1 tablespoon Dijon mustard

2 teaspoons finely grated lemon zest, grated on a microplane

¾ teaspoon fine sea salt

½ teaspoon fresh ground black pepper

½ teaspoon smoked paprika

1 large egg

½ cup finely chopped red bell pepper, from half a medium pepper (60 g)

3 tablespoons minced shallot, from 1 small shallot (30 g)

1 tablespoon chopped fresh dill

2 tablespoons chopped fresh parsley

¼ cup panko breadcrumbs (20 g)

1 tablespoon olive oil, for cooking

4 soft hamburger buns, split and lightly toasted

1 batch creamy dill sauce, as needed

Leaf lettuce, as needed

Directions

    1Prep: Preheat the oven to 350°F (177°C) and line a baking sheet with parchment paper (skip this if you plan to use an oven-safe skillet to sear and bake).

    2Make the binder: Add 4 ounces of the salmon (a quarter of the total amount of salmon) to the bowl of a food processor. Top with the Dijon mustard, lemon zest, salt, pepper, smoked paprika, and egg. Puree until smooth. Scrape into a mixing bowl.

    3Make the burger mix: Dice the remaining 12 ounces of salmon into ¼ inch pieces, then add to the bowl. Add the red bell pepper, shallot, dill, and parsley then fold it all together. Sprinkle the breadcrumbs over the top and fold again until just combined. Cover and refrigerate for 15 minutes.

    4Cook the burgers: Form the mixture into 4 equal patties (about ¾ inch thick). Heat olive oil in a skillet over medium heat. Brown the patties for 2 to 3 minutes per side. Transfer to the baking sheet (or, if it is oven-safe, slide the oven-safe skillet into the oven) and bake until firm and opaque in the center, about 8 minutes. Let rest for 3 to 5 minutes before serving on the buns.

  • Storing: Keep cooked burgers in an airtight container in the fridge for up to 4 days. Freeze for up to 1 month (we only recommend freezing if you have used fresh, not previously frozen fish). Salmon is on our dinner table frequently, and this baked whole fillet with lemon dill sauce is one of my most-reached-for recipes when I need dinner on the table fast.

The salmon gets a quick seasoning and brush of mayo, olive oil, and dried dill before going into a hot oven — and that little bit of mayo does something wonderful, keeping the fish moist and adding a subtle richness that plain olive oil alone doesn’t quite achieve.   • Preheat your oven to 400°F (200°C) and line a half sheet pan with parchment paper.
  • In a small bowl, mix together 1 tablespoon of mayo, the olive oil, and 1 teaspoon of dried dill until combined.
  • Lay the salmon fillet on the prepared baking tray and brush the mayo-dill mixture generously over the top. Season lightly with salt and pepper.
  • Bake for 20–25 minutes, until the salmon flakes easily with a fork. I usually pull it at around 22–23 minutes — right in the middle of the suggested range — which gives you perfectly cooked, still-juicy fish. The internal temperature should be around 130–135°F (55–57°C) if you’re using a thermometer.

  • Don’t overcook it. Salmon dries out quickly when pushed past 140°F (60°C). Aim to pull it out when it just starts to flake — it’ll carry over a little from residual heat on the pan.
  • Use a meat thermometer if you want to be precise. 130–135°F (55–57°C) gives you silky, just-cooked salmon. The FDA recommends 145°F (63°C), but most cooks and chefs prefer it slightly under for better texture and moisture.
  • Adjust the sauce quantity. The recipe makes a generous amount of sauce — plenty for a family. If you’re cooking for two or you’re light on sauce, halve it. It keeps well in the fridge for a couple of days too.
  • Swap sour cream for Greek yogurt. If you’d like a lighter sauce, plain full-fat Greek yogurt works really well in place of sour cream. It’s slightly tangier, which pairs nicely with the dill.
  • Try fresh dill. If you have it in your garden or can grab it from the shops, fresh dill takes both the coating and the sauce up a notch. Use about 1 tablespoon fresh for the salmon coating and 2 tablespoons for the sauce.
  • Storage: Leftovers keep in an airtight container in the fridge for 3–4 days. Cold salmon the next day is genuinely great flaked over a salad or tucked into a wrap. If reheating, do it gently at a low temperature — high heat will dry it out. Store the sauce separately.
  • Make it ahead: You can mix the sauce up to 2 days in advance and keep it covered in the fridge. The mayo-dill brush for the salmon can also be prepped ahead and kept chilled until you’re ready to cook.

I’ve always been that person who thinks that enough sauce can make just about anything better. We’ve been enjoying this creamy dill sauce recipe over the last week, and we’re obsessed. We created it as a sauce to serve with our salmon patties, but just like our favorite tartar sauce, the serving suggestions go beyond just one recipe for this one (this lemon dill baked salmon or oven baked trout are two that immediately come to mind).

The ingredient list is short and simple, and the only trick to making it the best is to let it sit for 30 minutes so the lemon, dill, and garlic can meld and permeate the creamy sauce.

Key Ingredients

  • Sour Cream and Mayonnaise: The base of this sauce is sour cream, with a little mayonnaise for extra flavor. We use this combination of sour cream and mayo for our potato salad dressing and love it. If you’re looking for a yogurt-based sauce, you can substitute the sour cream for plain thick yogurt. I like sticking with a brand that’s less tangy, like Fage or Siggi’s.
  • Dill: This is a dill sauce, after all. We call for fresh dill in our recipe below, but you can use dried dill if that’s all you have on hand. When substituting dried dill for fresh, use 1/3 the amount. So, in the recipe below, you will use 1 tablespoon of dried dill instead of the 3 tablespoons of fresh dill we call for.

  • Salt and Pepper: We suggest how much salt and pepper to add, but you really want to taste as you go and add enough to make your palate happy! If the sauce does not pop when you taste it, it probably needs a pinch more salt.

How to Make Our Favorite Dill Sauce for Salmon

Tip 1: Use a spoon to stir everything together. This sauce is easy! All you need to do is add all of the ingredients to a bowl and stir them together.

Tip 2: Let it rest for 30 minutes. This sauce gets better with time. We highly recommend letting the sauce sit in the fridge for at least 30 minutes before serving. If you don’t believe me, taste it before you place it into the fridge, and then again after it’s rested. It’s completely different, and the lemon and dill will have permeated throughout the whole bowl. Worth it!

Makes 1 cup

You Will Need

¾ cup sour cream (170g)

2 tablespoons mayonnaise (30g)

3 tablespoons chopped fresh dill (12g)

1 teaspoon lemon zest

1 tablespoon fresh lemon juice

½ teaspoon garlic powder

Salt and pepper, to taste

Directions

    1In a medium bowl, combine all of the sauce ingredients, stir well, then taste. Stir in a pinch of salt and pepper, then refrigerate for at least 30 minutes to allow the flavors to meld (it gets much better after 30 minutes). Taste, adjust with more salt and pepper, then serve.

  • Storing: Homemade dill sauce lasts for about a week when stored in an airtight container in the fridge. The fresh lemon and dill start to fade after that, so we recommend enjoying it within the week. Our family loves it, so we often make a double batch to have it on hand!
  • Substituting yogurt: You can use plain thick yogurt as a substitute for the sour cream. When using yogurt for this sauce, I prefer a less tangy option like Siggi’s. Taste the sauce before serving to see if it needs a bit more salt.

This lemon dill salmon recipe is my family’s favorite way to cook salmon. Thanks to our easy baking method, the fish stays moist, flaky, and melts in your mouth.

Lemon Dill Baked Salmon

My mom makes the best baked salmon! Her secret is adding some liquid to the baking dish and covering it. This gently poaches the fish in the oven (you could even call it oven poached salmon).

This lemon dill recipe uses her foolproof method, and I’m so excited for you to try it! This salmon is especially delicious served with our creamy dill sauce.

Key Ingredients

  • Salmon: Any salmon fillet will work for this recipe. However, I especially love those with a higher fat content, like sockeye, king, and coho. When baked, these types of salmon stay soft and moist.
  • Lemon: My mom always places a slice of lemon underneath her fillets, and I do the same. It adds a lovely lemon aroma and flavor to the dish.
  • Dill: Dill and salmon are such a classic pairing. I use fresh dill whenever possible, but you can substitute dried. I’ve shared tips for this below the recipe.
  • White wine: My mom sticks with water (which is totally fine), but I love adding a little extra flavor with dry white wine. Use something light and dry, like sauvignon blanc, pinot grigio, or unoaked chardonnay. I also use white wine for this skillet poached salmon.

Tip 1: Place salmon on a layer of fresh dill and lemon slices. Season your fillets with olive oil, salt, and pepper, then place the fillets down on top of the lemon and dill. You can leave the skin on for this recipe (it acts as an extra barrier, protecting the fish from overcooking).

The trick to perfectly baked salmon is gently baking it in a bit of liquid, like wine, stock, or water. Cover the dish and bake until just cooked through. You can call this recipe oven poached salmon. It’s practically foolproof. If your salmon is thick, expect the cooking time to be a few minutes longer than what we share below.

You Will Need

1 ½ pounds salmon fillets, 1-inch thick, preferably wild-caught

1 tablespoon olive oil

Salt and fresh ground black pepper

1 lemon, cut into slices

4 sprigs of fresh dill, plus more for serving

1/2 cup dry white wine or water

Directions

    1Preheat the oven to 325°F (162°C). Set aside a baking dish large enough to fit the fillets in one layer.

    2Lightly oil and season both sides of the fish with salt and pepper. (Optionally, cut the salmon into four 6-ounce fillets.)

    3Arrange lemon slices and dill on the bottom of the baking dish, then place the salmon skin-side down on top.

    4Add wine to the baking dish, and then cover with aluminum foil.

    5Bake until the fish flakes easily with a fork, 15 to 20 minutes, depending on the thickness of your fillets (thicker fillets may require longer). Check after 10 minutes to see its progress. The best way to prevent overcooking is to check the temperature of the salmon using an internal thermometer. The thickest part of the salmon should read 125°F.

    6Take the salmon out of the oven, untuck the foil to cover the dish loosely, and set aside on the counter for 5 minutes. The fish will continue to cook during this time.

    7Serve scattered with chopped fresh dill on top.

  • Dried dill: Use 1 tablespoon dried dill. Add half of the lemon slices at the bottom of the dish, and sprinkle the rest over the top of the salmon.
  • Wine: Use a light, dry wine like sauvignon blanc, pinot grigio, or unoaked chardonnay. Or substitute water.
  • White stuff on cooked salmon: The white stuff around cooked salmon is called albumin. It’s perfectly fine to eat, but since it isn’t the prettiest thing to look at, I quickly scrape it away and spoon a bit of the cooking liquid from the bottom of the dish on top.

This creamy potato salad with dill pickles is the one I end up making the most. It’s simple, quick, and made with just a handful of ingredients, but the flavor is spot on.

You get little pops of tangy dill pickles, a touch of sweetness from the sweet pickles, and fresh crunch from cucumber and green onions. Everything is coated in a lighter creamy dressing made with light mayo and light sour cream (or Greek yogurt if that’s what you have in the fridge).
