I can’t get enough of this black bean and corn salad! Our recipe is simple with tomato, onion, and fresh lime. Serve it on the side or with chips like salsa.

Black Bean and Corn Salad

This black bean and corn salad is not so much a recipe as a “throw everything we adore into a big bowl and stir” kind of thing. It’s also fantastic when you make it in advance, which means it’s perfect for meal prepping and gatherings.

It’s fresh, crisp, and a little smoky from smoked paprika, which takes this salad to a new level! For another favorite way to use corn, see this corn salad recipe with feta.

Key Ingredients

  • Black Beans: I use canned black beans, but drain and rinse them before adding them to the bowl with the other salad ingredients. You can also cook dried black beans from scratch. Here’s our black beans recipe if you need it.
  • Corn: I love raw corn in this salad (the same goes for this corn salad). I’m often asked if raw corn is okay to eat, and I’m here to say yes! Raw corn is super crisp, sweet, and crunchy, and it’s excellent in this recipe. You could also grill the corn until blistered and add it to this salad like I do for this grilled avocado guacamole. Rinsed canned or thawed frozen corn are good substitutes.
  • Tomatoes: I love the pop of sweetness from fresh tomatoes. Use what you love. I look for a juicy, sweet tomato. The tomato releases juices as it sits with the other salad ingredients, making the dressing even more delicious.
  • Onion, Garlic, and Jalapeño: Sweet or white onion is great here. I add a little garlic, and the jalapeño adds a bit of heat. If you are sensitive to spicy food, remove the seeds and white membrane from inside the pepper before chopping it (that’s where most of the heat is).
  • Lime and Olive Oil: Fresh lime juice and olive oil combine with salt and pepper for our simple dressing. I love it!
  • Smoked Paprika: Smoked paprika tastes smoky (as the name suggests) but isn’t spicy (unless you specifically use Hungarian or hot-smoked paprika). Chipotle powder is also excellent here but is spicy, so add to your taste.

How to Make Black Bean and Corn Salad

Tip 1: Prepare the corn. I love fresh corn for this salad. To use fresh corn, start by removing the husks and silky threads. Stand each cob upright on a cutting board and, holding it steady, slice downward with a sharp knife to remove the kernels.

Tip 2: Make the salad in a big bowl. This recipe keeps cleanup simple (hooray!). Once your corn is ready, add all the salad ingredients to a large bowl, toss to combine, and enjoy.

This black bean corn salad has so many serving options. Try it alongside grilled chicken, juicy pork chops, Asian-marinated shrimp, or even scrambled eggs. You can also serve it like a salsa with homemade tortilla chips or as a topping for grilled bread for bruschetta.

We love spooning this black bean and corn salad over just about anything and can easily down the whole bowl in one sitting. It’s perfect to serve with tortilla chips or as a topping for grilled bread. If you like things spicy, add more jalapeño or add a few dashes of your favorite hot sauce. We love fresh raw corn for this (it’s so crisp). Rinsed canned corn or thawed frozen corn works well when we can’t find it.

Makes 6 servings (about ¾ cup each)

You Will Need

1 (15 ounce) can black beans, drained and rinsed or 1 ½ cups cooked black beans

2 medium ears corn or 2 cups corn kernels

2 medium tomatoes, finely chopped

1 medium onion, finely chopped

1 garlic clove, minced

½ jalapeño, seeds removed and finely minced

2 tablespoons fresh lime juice

2 tablespoons extra-virgin olive oil

½ teaspoon smoked paprika

Salt to taste

Directions

    1Make the salad: In a medium bowl, stir together the black beans, raw corn, tomatoes, onion, garlic, jalapeño, lime juice, olive oil, and smoked paprika. Season to taste with salt (start with ½ teaspoon and go from there).

    2Let it sit: Cover it with plastic wrap and refrigerate it for at least 30 minutes before serving.

  • Storing: Keep in an airtight container in the fridge for up to 4 days. If you add avocado, it will not last as long as the avocado will brown.
  • Cook the corn: Grill it and then use in the salad or simmer in salted water until tender. To simmer them, prepare a bowl filled with ice and cold water. Bring a medium pot of salted water to a boil then cook the corn kernels until crisp tender, 2 to 3 minutes. Transfer the corn to the ice water to stop cooking. Drain and use in the salad.
  • Add avocado: I love to chop 1 medium avocado and stir into the salad.

This delightful Mushroom and Bean Stew was delicious, easy to make, and if you left off the Parmesan this recipe could easily be vegan. Whether you’re a strict vegetarian or someone who likes to eat meatless meals part of the time, I promise this is a delicious option for a plant-based meal!

You can eat the tasty mushroom stew with beans and tomatoes over brown rice like I did, or serve over cauliflower rice if you’d like a few less carbs. And don’t skip the ground fennel, which was one of the flavors that I thought really made this interesting.

We used Cannellini Beans for this recipe, which are white kidney beans. Those are creamy and good, but you can use any type of white bean you prefer.

This stew with white beans has 29 net carbs per serving, with 13 grams of protein. Of course the canned beans are the highest carb ingredient in this mushroom stew. If you want a version that’s lower in carbs, you can replace those with a low-carb vegetable like zucchini or cauliflower.

How to Make Mushroom Stew:

  1. Saute onions, garlic, and herbs until the onions are soft and starting to brown.
  2. While onions cook, wash and trim mushrooms, then cut into quarters (or sixths if the mushrooms are large.)
  3. Add mushrooms and vegetable broth to the pan with onions, cover and simmer 5-6 minutes.
  4. After mushrooms have cooked 5-6 minutes, add drained beans, tomatoes and juice, and 1/2 cup chopped parsley.
  5. Cover again and simmer 10 minutes more.
  6. Season to taste with salt and fresh ground black pepper.
  7. Serve hot, over brown rice or cauliflower rice.
  8. Mushroom and Bean Stew is great topped with freshly-grated Parmesan Cheese or Vegetarian Parmesan, but if you skip the cheese the recipe will be Vegan and dairy-free.

I think canned vegetable broth is sometimes rather flavorless, so I’d start with 1/2 cup and reduce it by simmering before adding to the recipe for more concentrated flavor. I used flat Italian parsley, but either kind will work.This is great topped with freshly-grated parmesan cheese.

I didn’t have any left to freeze, but I’m sure this freezes well if you can manage to have leftovers.

If Butter Bean Soup is something you’re not sure about, I hope you’ll stay with me for a minute. I wasn’t that familiar with them when I made this soup using Florida Butter Beans, and I discovered that they’re creamy and delicious!

If you can find them (or something similar) I highly recommend starting with dried butter beans that you’ve soaked overnight. That’s what I used when I first made this soup. But when I decided the soup desperately needed a photo update, I tried it with canned butter beans from the supermarket. And I was very happily surprised how good it was!

I first made Butter Bean Soup when I had a bad cold that hung on for weeks and needed some comfort food. But it was just as delicious when I made it again recently on one of those cold winter days where nothing sounds better than soup! I hope you try the recipe!

What type of beans did I use for Butter Bean Soup?

I made this soup the first time with dried Florida Butter Beans, (a type of heirloom baby lima bean) that I bought in San Francisco from Rancho Gordo Beans. I used canned butter beans when I updated the photos, and both those were delicious in this soup.

Are Butter Beans the same as Lima Beans?

According to many sources, butter beans and lime beans are the same type of legume. However, there is a difference. The name lima beans refers to the small green variety of these beans, that originated in Lima, Peru. The larger white and slightly creamier beans are often called butter beans, especially in the Southern part of the U.S.

Can you use a different type of bean?

If you’re still not sure about butter beans or lima beans, try the soup with a different type of white bean! I think Cannellini beans or pinto beans would both be a good choice.

How to Make Butter Bean Soup:

  1. If you’re lucky enough to have dried Florida Butter Beans or another type of dried butter beans or large white beans, soak them at least 8 hours, then drain the beans.
  2. If you’re using canned butter beans, drain them into a colander and rinse well with cold water, until no more foam appears.
  3. Heat the oil in a heavy soup pot and saute the onion and celery a few minutes; then add the Dried Thyme (affiliate link) and cook a couple of minutes more.
  4. Add the beans and 2 quarts water (for dried beans ) or 6 cups water (for canned beans.) 
  5. For dried beans, simmer on low until the beans are tender, probably at least an hour or more. 
  6. For canned beans, simmer about 20 minutes. (Add more water as needed while the beans are cooking.)
  7. While the beans cook, finely chop the cabbage.
  8. I used this boneless ham steak from Costco for the ham. Cut up enough ham to make about 2 cups of diced ham.
  9. Depending on how flavorful your ham is, you may want to add ham bouillon to the soup. Goya Ham Flavored Concentrate (affiliate link) is my favorite, but there are other good brands.

Ingredients

  • 1 lb. dried butter beans (see notes for canned beans)
  • 1 T olive oil
  • 1 medium yellow onion, chopped small
  • 1 cup chopped celery
  • 1 tsp. dried thyme (or less, to taste)
  • 2 quarts water
  • Goya Ham Bouillon, to taste (optional, but recommended)
  • 2 cups finely chopped green cabbage
  • 2 cups finely diced ham (see notes)
  • fresh ground black pepper to taste

Instructions

  1. Soak dried beans for about 8 hours, then pour into colander, rinse, and let drain. (I think the best way to cook beans is to soak them all day while you’re at work, then cook at night.)
  2. For canned beans, drain them into a colander placed in the sink and rinse well with cold water (until you don’t see any more foam.)
  3. In heavy soup pot, heat olive oil, saute onion and celery 3-4 minutes, until starting to soften, then add thyme and saute 1-2 minutes more. Add beans and 2 quarts water (for dried beans) or 6 cups water (for canned beans).
  4. Cook dried beans at a low simmer until they are starting to soften, adding a little more water occasionally if needed. (This could take an hour or more, depending on how fresh the beans are.)
  5. Cook canned beans about 20 minutes at a low simmer.
  6. When beans feel like they are about 3/4 soft (when you bite down on one) add ham flavor base (affiliate link) if using, finely chopped cabbage, and finely diced ham.
  7. Cook about 30 minutes more (or maybe a little longer for canned beans), until beans are very soft, soup broth is very flavorful, and most of the cabbage has disintegrated into the soup.
  8. Season to taste with fresh ground black pepper and serve the soup hot.

Notes

Use Rancho Gordo Florida Butter Beans, other dried butter beans, or baby lima beans to make this soup. Or use three or four 15-oz. cans of butter beans if you can’t find dried beans.

If you have a ham bone or some pieces of rind, by all means use them and remove when you serve the soup.

My family loves this easy black bean soup recipe so much. We make it often! I love how quickly it comes together and that it’s designed for canned or previously cooked black beans (hello, quick dinner!).

  • Black Beans: You can use canned black beans or home-cooked black beans (here’s how to cook dried black beans).
  • Aromatics: I love making this soup hearty, so I combine onion, carrot, and garlic for the base. Then, I add more flavor with a bay leaf, cilantro, vinegar, oregano, and cumin. This soup is so flavorful!!
  • Chipotle Chiles in Adobo: Whenever I see them in the store, I add a can of chipotles in adobo sauce to my cart. Chipotles are dried, smoked jalapeños that taste smoky and quite spicy. Adobo sauce is a spicy, red sauce that packs a major punch of flavor. For this soup, I add one pepper, which I mince, along with a little sauce. Then stir in garlic, ground cumin, oregano, red wine vinegar, and chipotle chiles for more flavor. Pour in your broth, tomatoes, and a bay leaf. Then, stir in the black beans and simmer until the veggies are tender, about 20 minutes.

Tip 2: Season with salt and acid. Before serving, I like to taste the soup and season it with salt and a little extra acid from vinegar or lime juice. I love lime juice for this (it really makes the flavors of the soup pop).

Tip 3: Creamy or brothy. We often enjoy this as a brothy soup (like in our photos), but you can also turn this into a creamy black bean soup by blending. For a thickened soup that’s somewhere in between, blend a portion and add it back (like I do for this white chicken chili).

You Will Need

4 (15oz) cans black beans, drained and rinsed or use 6 cups cooked black beans

1 to 3 canned chipotles in adobo, finely chopped, plus 1 tablespoon adobo sauce

2 tablespoons olive oil

1 cup diced onion, 1/2 large onion

3/4 cup diced carrots, 1 large carrot

1 tablespoon minced garlic, 3 to 4 cloves

1 teaspoon ground cumin

1/2 teaspoon dried oregano

1 tablespoon red wine vinegar or lime juice

1 (15oz) can diced tomatoes, try fire roasted tomatoes

4 cups (946ml) vegetable broth, see our homemade veggie broth

1 bay leaf

1/2 cup cilantro leaves, roughly chopped

For serving: Avocado, lime wedges, cilantro, sour cream, cheese

Directions

    1Open the can of chipotles and adobo sauce, remove a pepper (or more for spicier soup), and mince finely.

    2Heat the olive oil in a large Dutch oven or deep pot over medium heat. Add the onions and carrots. Cook, stirring often, until they have softened slightly and smell sweet, about 5 minutes.

    3Stir in the garlic, cumin, and oregano, and cook for 30 seconds.

    4Add the vinegar or lime juice, minced chipotles and adobo sauce, can of tomatoes, broth, black beans, and bay leaf.

    5Bring to a simmer, taste, and then season with salt and pepper.

    6Simmer the soup until the carrots are tender, and the broth reduces slightly, about 20 minutes.

    7Stir in the cilantro and the juice from half a lime (or substitute the lime with an additional tablespoon of vinegar).

    8For a brothy soup (like in our photos and video), serve the soup straight away.

    9For a thicker, more velvety soup, transfer 1/4 of the soup to a blender and blend until smooth. Pour the blended portion back into the soup and serve.

  • Chipotles in adobo: We use 1 whole pepper and 1 tablespoon of the adobo sauce in the can, adding moderate heat to the soup. For a spicier soup, add more, but be careful. The peppers do pack a punch. Find canned chipotles in adobo sauce in most grocery stores, usually near hot sauce or enchilada sauces. Substitute your favorite smoky hot sauce.
