This favorite Paprika Chicken Recipe is an easy skillet meal that I’ve loved for years! And food blogs are a work in progress, and I love updating a favorite recipe with better photos so current readers will want to try it. Sometimes I like to improve the recipe as well. So for this updated recipe for Paprika Chicken I made a few changes. (You can see the very old original version here if you’d like.)

I updated the recipe for Paprika Chicken to make it easier to make to make and also slightly lower in carbs. This recipe is inspired by Chicken Paprikash, a traditional Hungarian dish that includes a roux made of flour and chicken fat or butter. My version doesn’t have flour, and if you like chicken, onions, red peppers, paprika, and sour cream, I bet you’ll enjoy the lower-carb version of Paprika Chicken!

Is this chicken with paprika an authentic Hungarian Recipe?

I’m not claiming this is an authentic Hungarian recipe! So if this isn’t the way your Hungarian grandmother used to make it, go ahead and make her version if you still have that recipe!

Can you use red peppers from a jar for Paprika Chicken?

For years I did make this Paprika Chicken recipe with roasted red pepper from a jar. But when I decided to update the recipe I tried it with fresh bell peppers, chopped in large pieces and cooked with the onions. Both versions were delicious, so make it the way you prefer.

Please use Hungarian Paprika for this chicken recipe!

I want to emphasize the importance of using real Hungarian paprika for this recipe! You can find it sold in nearly every U.S. grocery store, usually in a tin rather than a glass jar. I’m a fan of Szeged Sweet Paprika (affiliate link) and Szeged Hot Paprika (affiliate link). But any Hungarian paprika will be better than the American version from the grocery store. And real Hungarian Paprika is so flavorful that I bet you’ll want to use it regularly once you try it!

How low in carbs is this Paprika Chicken Recipe?

How to Make the Paprika Chicken Recipe:

  1. Simmer chicken broth (or homemade chicken stock) in a small pan until it’s reduced to 3/4 cup. 
  2. Drain tomatoes into a colander in the sink. 
  3. Cut onion and two red bell peppers into pieces.
  4. Trim chicken breasts, and cut chicken into cubes about 1  square.
  5. When ingredients are ready, toss chicken cubes with 1 tsp. sweet paprika, salt, and fresh-ground black pepper.
  6. Heat olive oil and cook chicken over medium-high heat until it’s well browned, about 5 minutes. Remove chicken to a plate.
  7. Add more oil and brown onions. Then add the rest of the sweet paprika, hot paprika, and ground caraway seed (if using) and cook about 1 minute more.
  8. Add red peppers and cook until they’re starting to get soft when you pierce with a fork, then add drained tomatoes and cook about 2 minutes more.
  9. Add the reduced stock and cook 2-3 minutes.
  10. Then add browned chicken pieces and any juice that’s on the plate, turn heat to LOW, and simmer about 2-3 minutes more or until the chicken is hot.
  11. Turn off the heat and let the dish sit for a couple of minutes (to be sure it’s NOT TOO HOT or the sour cream will curdle).
  12. When it’s cooled a little, remove a few tablespoons of liquid from the pan and  and gently stir into sour cream.
  13. Then stir that mixture into the chicken and vegetables. (Blogger fail, I forgot to take a photo of that step so I had to use the old picture, which is why it’s a different pan.) 
  14. Season with a little more salt and fresh-ground pepper if desired and serve immediately.
  15. Paprika Chicken is traditionally served over rice or noodles, but I really enjoyed it served plain as a stew.

Ingredients

  • one 14.5 oz. can chicken broth (see notes)
  • one 14.5 oz. can diced tomatoes, drained
  • 1 small onion
  • 2 red bell peppers
  • 3 large boneless, skinless chicken breasts
  • 4 tsp. sweet paprika (see notes)
  • 1 tsp. hot paprika, sometimes called sharp paprika (see notes)
  • 1/2 tsp. ground Caraway seed (optional)
  • salt and fresh-ground black pepper (to taste)
  • 1 T + 2 tsp. olive oil
  • 1 cup sour cream

Instructions

  1. Put the chicken stock or broth into a small pan and simmer over medium heat until it’s reduced to 3/4 cup.
  2. Drain the canned tomatoes into a colander placed into the sink (you can catch the juice and freeze for another use if you’d like.)
  3. Cut onions and red bell pepper into fairly large pieces, about an inch square.
  4. Trim the chicken breasts until all the visible fat is gone.  (I save the scraps to make homemade chicken stock). Cut chicken into large cubes (about 1 inches square).
  5. Season the chicken cubes with 1 tsp. Szeged Sweet Paprika plus salt and fresh-ground black pepper to taste.
  6. Heat 1 T. olive oil in a large non-stick frying pan and cook chicken over medium-high heat until the pieces are nicely browned on all sides and barely cooked through, about 5 minutes.
  7. Remove chicken to a plate.
  8. Add the other 2 tsp. of olive oil and the onions and cook unions about 4 minutes. Add the rest of the sweet paprika, the Szeged Hot Paprika, and the ground caraway seed (if using) and cook about 1 minute more.
  9. Add peppers and cook until they are starting to soften when pierced with a fork, then add the tomatoes and cook about 2 minutes more.
  10. Add the reduced chicken stock and cook 2-3 minutes, or until the stock is bubbling hot.
  11. Then add the browned chicken cubes and any juice that’s accumulated on the plate), turn heat to LOW,  and simmer just until the chicken is heated through, about 2-3 minutes.
  12. Turn off the heat and let the mixture sit for a minute or two. (This is VERY IMPORTANT so it’s not so hot that the sour cream will curdle.)
  13. Remove a few tablespoons of the hot liquid, add to the sour cream, and stir to combine.
  14. Then add the sour cream mixture to the skillet and stir gently to combine. (The mixture should have completely stopped simmering before you add the sour cream.)
  15. Serve hot. I love this dish just served in a bowl like a stew, but you eat it over rice or cauliflower rice if you prefer.
  16. I wouldn’t recommend freezing for the Paprika Chicken Recipe, but it will keep for a few days in the fridge and can be reheated in the microwave or in a pan on the stove (with low heat, don’t let it boil or the sour cream will curdle.)

Notes

Chicken broth should be simmered to reduce to 3/4 cup; you can also start with 1 1/2 cups homemade chicken stock instead of canned broth if you have some.

If possible I’d use a combination of Szeged Sweet Paprika (affiliate link) and Szeged Hot Paprika (affiliate link) for this recipe, but any Hungarian Paprika will be fine.

Instant Pot Buffalo Chicken Soup is one of my favorite soup recipes, and this is warm and comforting if it’s cold where you are! This is a soup  for people who love the strong flavors of Frank’s Red Hot Sauce and crumbled blue cheese!

If you like hot spicy Buffalo Wings dipped into blue cheese, or any other variation of those Buffalo Chicken flavors, you’re probably going to love this creamy Buffalo Chicken Soup. It did take me a couple of tries testing variations with Jake and Kara to come up with a version of this soup we thought was a total winner. But we loved the final version!

And then after I uploaded the photos, I wished we had ground up the thyme when we added it to the soup. But I decided the flecks of thyme add character to the soup (and the thyme does add wonderful flavor!) So for all the fellow Buffalo Chicken fans, hope you enjoy this soup!

How spicy is this Buffalo Chicken Soup?

I would say this soup is moderately spicy. But here is my advice: You can always add more Frank’s Red Hot Sauce to the finished soup, but you can’t take it out. The amount we ended up with for the recipe made a tasty soup that we thought was just spicy enough, but feel free to use less Frank’s Red Hot Sauce if you’re not sure how much heat you’ll want.

What if you’re not a fan of blue cheese?

If you enjoy Buffalo Chicken flavors but aren’t so big on blue cheese, just top the soup with Parmesan or any grated or crumbled white cheese that you prefer.

How to Make Instant Pot Buffalo Chicken Soup:

  1. Heat olive oil in the Instant Pot on the Saute/Medium setting, add onions and celery and cook until they’re starting to soften.
  2. Add thyme (preferably ground thyme) and Garlic Powder and cook a minute or two longer. (If you have ground thyme, use a slightly smaller amount.)
  3. While veggies cook, trim the chicken and cut into lengthwise strips.
  4. Add chicken, Frank’s Red Hot Sauce (affiliate link), and chicken broth to Instant Pot.
  5. Lock the lid and set Instant Pot to MANUAL/HIGH PRESSURE for 15 minutes.
  6. After 15 minutes, use NATURAL PRESSURE RELEASE for 10 minutes, then quick release the remaining pressure.
  7. While the soup cooks, cut cream cheese into chunks and crumble the blue cheese.
  8. Use a slotted spoon (affiliate link) to remove the chicken to a cutting board and shred apart (or cut if you prefer chunks.)
  9. After you remove the chicken from the Instant Pot, add the two types of cheese to the hot soup and let it melt while you’re shredding the chicken.
  10. When cheeses have melted, whisk soup together, then add the shredded chicken back into the soup.
  11. Serve the Buffalo Chicken Soup soup hot with plenty of crumbled blue cheese and Frank’s Red Hot Sauce to add at the table!

  11. When cheeses have melted, whisk soup together, then add the shredded chicken back into the soup. (You can heat it for a minute or two using the Saute setting if needed, but it will probably still be pretty hot.)

Some bowls are complicated. This one is just good hummus, quick herby lemony chicken and whatever crunchy veg is in the fridge, and somehow that’s exactly enough.

The whole thing lives or dies on the hummus, honestly. I use a store-bought one from a little place here in Sydney called Erciyes (properly garlicky, velvety, and so smooth ), but use whichever brand you genuinely love, or make your own.

It’s naturally high in protein between the chicken and the hummus, and just as good with leftover rotisserie chicken or sliced turkey if you want a completely no-cook version. I like to pair it with some Lebanese flatbread or pita bread for extra carbs, but you can go without.

Per serving: under 500 calories, 45 grams of protein and 13 grams of fibre.

For this week’s Friday Favorites pick, I’m recommending this Asian Marinated Chicken that was such hit when I cooked it on kabobs for dinner guests! And the kabobs were enjoyed by both kids and adults. So I’m happy to report that the marinated chicken kabobs are not only healthy and low in carbs, they’re kid-friendly as well. If you’re looking for a tasty idea for summer grilling, I recommend this recipe.

If you don’t want to go to the trouble of making kabobs, just use my tips for making juicy grilled chicken breasts with the same marinade and make pieces of grilled chicken instead! Either way you do it, this Asian Marinated Chicken will be perfect for a summer dinner.

What Asian flavors are in the marinated chicken?

I am not claiming this is an authentic Asian recipe, but with soy sauce, Asian sesame oil, garlic, and ginger, there are a lot of Asian flavors going on here.

What skewers did I use for Asian Marinated Chicken Kabobs?

This recipe uses those beautiful blade-type skewers I got in Turkey, and if you’re making kabobs I highly recommend using either thicker blade-type skewers (affiliate link) or double skewers (affiliate link) to prevent the meat from spinning around on the skewers. But if you don’t have any skewers like that, make sure you squeeze the food together to hold it in place.

How to make Asian Marinated Chicken without an outdoor grill:

If you don’t have an outdoor grill (or it’s not grilling weather) the grilled chicken kabobs can be cooked on a stove-top grill pan with ridges or George Foreman Grill as well. (affiliate links) Remember the George Foreman Grill cooks both sides at once, so adjust the grilling time.

How to make Asian Marinated Chicken Kabobs:

  1. Mix together the oil, soy sauce or Gluten-Free Soy Sauce (affiliate link), sesame oil (affiliate link), garlic puree, ginger puree, fresh lime juice, and curry powder to make the marinade.
  2. Trim chicken breasts (or use 8 skinless, boneless thighs if you prefer) and cut in 4 or 5 pieces crosswise.
  3. (If you prefer cooking whole chicken breasts, use the marinade in this recipe and tips in my post about juicy grilled chicken breasts.)
  4. Put chicken and marinade in a Ziploc bag and let it marinate all day in the fridge.
  5. When it’s time to cook, drain the chicken pieces while you preheat the grill to medium-high.
  6. Thread chicken on to skewers, folding each piece over so it won’t spin around on the skewer.
  7. Cook chicken about 8 minutes on the first side, or until you see nice grill marks and the chicken is starting to feel firm.
  8. Then turn skewers over and cook about 5 minutes more on the second side.

  • 1/8 cup peanut oil (see notes)
  • 1/8 cup olive oil (see notes)
  • 1/4 cup soy sauce (see notes)
  • 1 T Asian sesame oil
  • 1 T garlic puree
  • 2 tsp. ginger puree
  • 3 T fresh lime juice (see notes)
  • 1 tsp. Madras Curry Powder or any curry powder you like will work
  • salt, pepper to taste

Instructions

  1. Mix together the peanut oil (or more olive oil), olive oil, soy sauce, sesame oil, garlic puree, ginger puree, fresh lime juice, and curry powder to make the marinade.
  2. Trim chicken, removing all visible fat and tendons.
  3. Cut chicken breasts into 4 or 5 crosswise strips. (For thighs, cut into two pieces each.)
  4. (If you prefer cooking whole chicken breasts, use the marinade in this recipe with tips my for making juicy grilled chicken breasts.)
  5. Arrange chicken in single layer in Ziploc bag, pour marinade over and marinate at least 8 hours in the refrigerator. If you’re going to be home, turn it a few times, but it’s not essential.
  6. To cook, drain chicken in a colander in the sink and let it come to room temperature while you preheat gas or charcoal grill to medium high.
  7. Spray the grill with non-stick spray or brush with oil before you heat. (You can also brush a little oil directly on the kabobs after you’ve assembled them.)
  8. Thread chicken on to skewers, folding each piece over so it won’t spin around on the skewer. I like blade shaped skewers (affiliate link) or double skewers (affiliate link) to prevent the meat from spinning.
  9. Put chicken on grill and cook about 8 minutes, rotating a partial turn a few times for maximum grill marks.
  10. Then turn chicken over and cook about 5 minutes more, or until chicken feels firm but not hard to the touch.
  11. For best results, use an instant-read meat thermometer (affiliate link) and take the chicken off when it reaches 165F/75C. (See more about safe temperatures for food.)

This is genuinely one of my favorite “feels fancy but isn’t” meals. The chicken gets a double hit of flavor — garlic powder right in the seasoning and Italian seasoning through the crumb — and frying it in a mix of olive oil and butter gives you a noticeably tastier, richer crust than oil alone. But the real reason I keep making this one is the pairing: crispy chicken Milanese with a lightened-up Parmesan Caesar salad is such a good combo, because the chicken basically acts like a giant, protein-packed crouton alongside the crisp, cool lettuce.

I skip the bacon you’d normally find in a Caesar since the chicken already brings plenty of protein, and instead of whole croutons I use crouton crumbs (Pangrattato) scattered through the salad — you still get that crunch in every bite, just without piling on the calories and carbs. It’s a full, satisfying meal that doesn’t feel heavy.

  • Chicken breasts — sliced into thinner cutlets so they cook quickly and evenly
  • Salt, garlic powder, and pepper — seasons the chicken itself, not just the crumb, so every bite has flavor

For the crumbing station

  • Flour — helps the egg stick
  • Eggs — the “glue” layer between flour and crumbs
  • Breadcrumbs (panko works great for extra crunch) — mixed with Italian seasoning and a little salt so the crust is seasoned, not just crispy
  • Italian seasoning — this is one of my two flavour secrets in this recipe; it makes the crust taste like more than “just breaded chicken”

For cooking

  • Olive oil and butter — cooking in a mix of the two (rather than oil alone) gives you a richer, tastier golden crust

For the Parmesan Caesar salad

  • Light mayo and low-fat Greek yogurt — the base of a lighter Caesar dressing that still tastes creamy
  • Parmesan (finely grated for the dressing, shaved for the salad) — brings the classic Caesar flavor
  • Garlic powder and Dijon mustard — rounds out the dressing’s flavor
  • Worcestershire sauce and anchovy (both optional) — for a more traditional Caesar flavor, add these in; leave them out for a milder, simpler version. I didn’t have either when I was shooting this recipe, but I do like to add them.
  • Romaine, cos or gem lettuce — crisp, sturdy lettuce that holds up well to the dressing
  • Cherry tomatoes and red onion — fresh, juicy contrast to the crispy chicken
  • Crouton crumbs (pangrattato) — this is the trick that keeps the salad lighter: you get the crunch of croutons without needing a full cup of them

How To Make Chicken Milanese

Find the full recipe and nutritional information below. Here’s the step-by-step for how to make chicken Milanese.

  • Cut away the chicken tenderloins and slice the main breast into two thinner pieces. Cover with cling wrap (optional) and pound with a meat hammer until thin and even. Season one side with salt, garlic powder, and pepper, and the other side with a touch more salt.
  • Set up your breading station: flour in one bowl, whisked eggs in a second, and breadcrumbs mixed with Italian seasoning and salt in a third.
  • Dredge each cutlet in flour (shaking off the excess), then egg, then press firmly into the breadcrumb mixture, flipping a few times so it’s fully coated on both sides.
  • To pan-fry: Heat a large skillet over high heat, then bring it down to medium-high. Add a tablespoon and a bit of olive oil and half a tablespoon of butter. Once sizzling, cook 2-3 cutlets at a time (don’t overcrowd the pan) for 2.5-3 minutes per side until golden and crispy, topping up oil and butter as needed between batches. Finish with a sprinkle of sea salt.
  • To air fry: Preheat the air fryer to 200°C/400°F. Arrange the crumbed cutlets in a single layer, spray both sides generously with oil, and cook for about 10-12 minutes, flipping and spraying again halfway through, until golden and cooked through.
  • To bake: Preheat the oven to 220°C/425°F. Place the cutlets on a wire rack set over a baking tray (this keeps the crumb crispy on both sides by letting air circulate underneath). Spray generously with oil and bake for 18-22 minutes, flipping halfway, until golden and cooked through.

Make my healthy Caesar salad

  • Meanwhile, make the dressing: whisk together the mayo, yogurt, grated parmesan, garlic powder, Dijon mustard, a little lemon juice, salt, pepper, and a splash of water until smooth. Add the Worcestershire sauce and minced anchovy here if using. Thin with a touch more water if needed, and taste for seasoning.
  • Chop the lettuce, halve the tomatoes, and thinly slice the onion. Shave a little extra parmesan for the salad.
  • Bash your croutons in a Ziploc bag with a rolling pin or meat hammer to turn them into crumbs (or use my Pangrattato recipe if you’re making it from scratch).
  • Toss the lettuce, tomatoes, and onion with 2-3 tablespoons of dressing. Add most of the crouton crumbs and shaved parmesan, toss again, then sprinkle the remaining crumbs on top.
  • Serve the crispy chicken Milanese with a generous serving of salad alongside.

  • Pound the chicken evenly. This is the single biggest thing that makes or breaks a Milanese — even thickness means even cooking, so you don’t end up with a dry thin end and an undercooked thick end.

Crispy, golden chicken Milanese with a lighter Parmesan Caesar salad — a satisfying dinner that’s ready in about 35 minutes, with pan-fried, air-fried, and baked options included. Find step-by-step photos and more recipe tips above. Nutrition below is for chicken and salad.

For the Parmesan Caesar dressing

  • Cut away the tenderloin from each chicken breast and slice the main piece into two thinner cutlets. Cover with clingwrap (optional) and pound with a meat hammer until thin and even. Season one side with the salt, garlic powder and pepper, and the other side with a touch more salt.

  • Set up a breading station: flour in the first bowl, whisked eggs in the second, and breadcrumbs mixed with Italian seasoning and salt in the third.

  • Dip each cutlet in flour (shaking off excess), then egg (shaking off excess), then press into the breadcrumbs, flipping a few times to coat evenly. Place on a plate and repeat with the remaining pieces.

  • Pan-fry: Heat a large skillet over high heat, then reduce to medium-high. Add a tablespoon and a bit of olive oil and half a tablespoon of butter. Once sizzling, cook 2-3 cutlets at a time for 2.5-3 minutes per side until golden and crispy, adding more oil/butter between batches as needed. Sprinkle with a little sea salt to finish.

  • Air fryer method: Preheat to 200°C/400°F. Arrange cutlets in a single layer, spray both sides with oil, and cook 10-12 minutes, flipping and re-spraying halfway, until golden and cooked through (internal temp 165°F/75°C).

  • Oven method: Preheat to 220°C/425°F. Place cutlets on a wire rack over a baking tray, spray generously with oil, and bake 18-22 minutes, flipping halfway, until golden and cooked through.

  • Make the dressing: whisk together the mayo, yogurt, parmesan, garlic powder, Dijon, lemon juice, salt, pepper and water until smooth. Stir in Worcestershire sauce and anchovy, if using. Thin with a little more water if needed and taste for seasoning.

  • Chop the lettuce, halve the tomatoes, and thinly slice the onion. Shave the parmesan for the salad.

  • Crush your croutons into crumbs (pangrattato) using a rolling pin or meat hammer in a Ziploc bag.

  • Toss the lettuce, tomatoes and onion with 2-3 tablespoons of dressing. Add most of the crouton crumbs and shaved parmesan and toss again. Sprinkle remaining crumbs on top.

  • Serve the chicken Milanese with a generous side of salad.

Chicken and Avocado Salad with Lime and Cilantro was inspired by a recipe my sister Pam discovered on Pinterest! And my version of this tasty salad is a recipe I’ve made over and over since Pam first told me about it. She sent me an e-mail that had just a list of ingredients. So I worked on the salad and made up my own amounts and directions!

My version of this favorite salad has chunks of chicken and avocado, and I mix the lime and mayonnaise to make a dressing. And my family has some cilantro avoiders, so I often make an equally-delicious version without cilantro. Through the years I’ve made this chicken and avocado salad for so many parties. And if you like these ingredients, I bet this salad is going to be a keeper for you too!

The salad became so popular on the site that a few years ago I decided I should improve the photos. I also realized now I usually make a slightly larger amount than the original recipe. So this recipe is the new-and-improved version of this chicken and avocado salad, with slightly more chicken, avocado, and cilantro than the original version. Feel free to adjust ingredients and amounts any way that suits your fancy! And I think this combination will be good no matter how you switch it up!

What ingredients do you need for this recipe?

  • cooked chicken
  • avocados
  • fresh squeezed lime juice; I used my fresh-frozen lime juice
  • salt, to taste
  • green onion
  • chopped fresh cilantro (optional, see notes)

How to make this chicken and avocado salad without Cilantro:

If you’re one of those people with the anti-cilantro tastebuds, simply triple the amount of green onion and skip the cilantro. This salad will still be amazing without cilantro, I promise!

Can you make this salad with rotisserie chicken?

Yes, I highly recommend using rotisserie chicken for this salad if you don’t want to take time to poach some chicken breasts. I’ve made this with rotisserie chicken I cut up myself and also with the pre-cut rotisserie chicken that comes in a big pack at Costco!

How long will Chicken and Avocado Salad keep in the fridge?

I’ve enjoyed this salad for lunch when it had been in the fridge overnight. But the avocado is a fragile ingredient and I don’t think it would last in the fridge for more than a day or two, and this salad is always best freshly made.

How low in carbs is the Chicken and Avocado Salad?

This amazing salad is not only extra flavorful but the salad only has 2 net carbs per serving and 18 grams of protein!

How to make Chicken and Avocado Salad with Lime and Cilantro:

  1. I used three cups of diced chicken rotisserie chicken from Costco, and we cut it into chunks of chicken that weren’t too small.
  2. Dice up 2 medium avocados, and toss them with fresh-squeezed lime juice. 
  3. Slice the green onion. (Use about 3/4 cup sliced green onion if you’re skipping the cilantro.
  4. Chop up fresh cilantro. (We chopped the cilantro very fine so the cilantro flavor would be all through the salad.)
  5. I mixed mayo and fresh squeezed lime juice to make the dressing; use more or less dressing to taste. (Remember there is already some lime juice on the avocado, so if you’re not that crazy about lime you could use a bit less.)
  6. Put chicken in a bowl large enough to hold all the ingredients, add sliced green onions and dressing and mix well, so all the chicken is coated with dressing.
  7. Add avocado with the lime juice that’s in the bottom of the bowl and mix gently to combine.
  8. Then add finely chopped cilantro and gently mix again, just until it’s barely combined. Season with salt to taste.
  9. Serve the salad right away or chill for a few hours before serving.
  10. This salad will keep in the fridge for a day, although the avocado is best when it’s freshly made.

Make it a Low-Carb Meal:

Chicken and Avocado Salad with Lime and Cilantro could be a nice side dish for a pot-luck. But if you wanted to use it as a main dish salad I’d serve with something like Olive Bread, Savory Almond Flour Bread, or Low-Carb High-Fiber Savory Muffins on the side.

More Salads with Chicken or Avocado:

Ingredients

  • 3 cups cooked chicken, cut into large pieces
  • 2 medium avocados, diced
  • 3 T fresh squeezed lime juice, divided
  • salt, to taste
  • 1/4 cup thinly sliced green onion
  • 1/2 cup finely chopped fresh cilantro (see notes)
  • 3 T mayo (see notes)

Instructions

  1. Cut up enough chicken to make 3 cups of chopped chicken. I like it cut into fairly large chunks.
  2. Dice the avocados into medium-sized pieces, put in small bowl, mix with 1 T of the lime juice, and season avocado with salt to taste.
  3. Thinly slice the green onion and finely chop the cilantro (if using).
  4. Mix 3 T mayo and 2 T lime juice to make the dressing. (If you’re not a huge lime fan like I am, you might want to start with less lime and taste, adding more until it seems sour enough for you.
  5. Put the chicken into a bowl large enough to hold all the salad ingredients.
  6. Add the sliced green onions and dressing and toss until all the chicken is coated with dressing.
  7. Add the avocado and any lime juice in the bottom of the bowl and gently combine with the chicken.
  8. Then add the chopped cilantro and gently mix into the salad, just until it is barely combined. Season with salt to taste.
  9. Serve right away or chill for a while before serving.  This could be served inside pita bread or sandwich bread, or inside crisp lettuce cups, but we just ate it as a salad.
  10. Chicken and Avocado Salad will keep in the fridge overnight, but the avocado is best when it’s freshly made. When I make it I rarely have leftovers, but if you’re only making for one or two people you might want to cut the recipe in half.

Notes

If you’re not a cilantro fan just triple the green onion and skip the cilantro completely.

If you like a lot of dressing on your salads, you might want to slightly increase the dressing amounts.

Instant Pot Teriyaki Chicken is a recipe that was inspired by some cooking experiences from my past! Years ago I learned to make Teriyaki Chicken from a friend who had lived in Hawaii and gotten the recipe there. And that Teriyaki Chicken recipe was delicious (but loaded with sugar) so in the early days of the blog I adapted it into a version of Baked Teriyaki Chicken that was Sugar-Free, replacing the sugar with a low-carb Sweetener.

Kara and I looked at recipes around the web when we decided to try making this favorite chicken dish in the Instant Pot. But it was the perfect easy 5-ingredient sugar-free sauce from that earlier recipe that mostly inspired the Instant Pot Teriyaki Chicken we came up with!

This flavorful chicken only needs four minutes under pressure; then we removed the strips of chicken and broke it apart into chunks while we simmered the sauce. We did thicken the sauce with a teeny-tiny bit of cornstarch, but this is still very low in carbs! If you like Teriyaki flavors, I hope you try it soon.

Is this an authentic Teriyaki Chicken Recipe?

Let me state clearly I have no idea if the recipe I got from my long-ago friend is an authentic recipe for Teriyaki Chicken! But she did get it from a Japanese neighbor, and it has ingredients like soy sauce, garlic, and ginger which are traditional in Teriyaki Chicken. And it doesn’t have some ingredients seen in Americanized versions of this dish.

What Size Instant Pot Did I use to make Teriyaki Chicken?

I use a 6 Quart Instant Pot (affiliate link) for all my Instant Pot Recipes.

How low in carbs is the Instant Pot Teriyaki Chicken?

Even with the tiny amount of cornstarch we used, this Teriyaki Chicken made in the Instant Pot has only 6 net carbs per serving with 28 grams of protein. (That nutritional information is for the chicken only, but if you serve it over one of the things recommended below, most of them will only add a few more carbs.)

How to make Instant Pot Teriyaki Chicken:

  1. Trim chicken and cut into strips.
  2. Mix ingredients to make the sauce.
  3. Spray the the Instant Pot with non-stick spray.
  4. Add chicken  to Instant Pot and pour sauce over.
  5. Set to MANUAL, HIGH TEMPERATURE, 4 MINUTES.
  6. When time finishes, let the Instant Pot NATURAL RELEASE for 10 minutes, then release rest of pressure.
  7. Remove chicken to cutting board.
  8. Set Instant Pot to SAUTE, HIGH and let sauce come to a simmer.
  9. Mix cornstarch with water, and whisk into sauce. Let cook until the mixture is thickened, about 2-3 minutes.
  10. Break chicken apart and stir back into sauce.
  11. Serve the Instant Pot Teriyaki Chicken hot.

What can you serve with the Teriyaki Chicken?

  • We made Easy Cauliflower Rice (with garlic and green onion) and served the chicken over that for a rice-bowl meal.
  • You could make a rice bowl with Palmini Rice (affiliate link) if you prefer that.
  • I would love this chicken over Spicy Cilantro Peanut Slaw for a cabbage bowl meal.
  • The Teriyaki Chicken would be delicious served over steamed broccoli or barely-wilted spinach.
  • I would gobble it up served over lightly sauteed Zucchini Noodles or served with Air Fryer Asian Green Beans.
  • It would be amazing with Stir-Fried Bok Choy.
  • And of course you can also serve the chicken over cooked rice, brown rice, or even Quinoa if your diet includes that.

Ingredients

  • 4 large boneless, skinless chicken breasts   
  • 2/3 cup soy sauce or Gluten-Free Soy Sauce 
  • 1/3 cup water
  • 6 T Golden Monkfruit Sweetener (see notes)
  • 1 T minced garlic
  • 1 T minced ginger
  • 2 T cornstarch
  • sesame seeds for garnish, optional

Instructions

  1. Trim chicken breasts and cut into thick crosswise strips.
  2. Mix soy sauce, water, Golden Monkfruit Sweetener, minced garlic, and minced ginger to make the sauce.
  3. Spray the inside of the Instant Pot with non-stick spray.
  4. Add chicken strips to Instant Pot and pour the sauce over.
  5. Set Instant Pot to MANUAL, HIGH TEMPERATURE, 4 MINUTES. 
  6. When cooking time ends, let the Instant Pot NATURAL RELEASE for 10 minutes, then release the rest of the pressure.
  7. Remove chicken to a cutting board. 
  8. Set Instant Pot to SAUTE, HIGH TEMPERATURE and let sauce come to a simmer.
  9. Mix cornstarch with 2 T water, and whisk into sauce in the Instant Pot. Let it cook until the mixture is thickened, about 2-3 minutes.
  10. Break chicken apart into bite-sized pieces and stir back into sauce.
  11. Serve Instant Pot Teriyaki Chicken hot. We served the chicken over Easy Cauliflower Rice with Garlic and Green Onion for a rice-bowl meal.

Notes

I’m a huge fan of  Golden Monkfruit Sweetener (affiliate link), but use the sweetener you prefer for this recipe.

You can use fresh minced garlic and ginger root, or minced garlic and minced ginger from a jar.
